Leeks and white wine fondu broth
1,75 litres (7 cups)
Ingredients
- 1/2 leek
- 1 onion
- 1 carrot
- 2 garlic cloves
- 15 ml (1 tablespoon) of marinade spices
- 10 ml (2 teaspoon) of fresh chopped rosemary
- 500 ml (2 cups) of white wine
- 1,25 L (5 cups) of chicken broth of fish fumet
- Mince leek, onion, carrot and garlic.
- In a casserole, heat oil at medium heat. Roast minced vegetables with spices and rosemary for 2 minutes.
- Pour white wine and broth. Bring to a boil. Cover and simmer at low heat for 20 minutes.
- Filter borht if desired. When it's time to eat, pour warm broth into the bowl.
