Ingredients
  • 1 L (4 cups) of mesclun
  • 250 ml (1 cup) of grated or sliced into juliennes carrots
  • 30 ml (2 tablespoons) of fresh mint
  • 16 slices of maple smoked ham
  • 250 ml (1 cup) of raspberries

For the vinaigrette:

  • 125 ml (1/2 cup) of raspberries
  • 60 ml (1/4 cup) of olive oil
  • 30 ml (2 tablespoons) of chopped chive
  • 15 ml (1 tablespoon) of old-style mustard
  • 15 ml (1 tablespoon) of lemon juice
  • Salt and pepper up to taste
Preparation

  • In the container of an electric mixer, set ingredients for the vinaigrette. Mix for 1 minute.
  • In a large salad bowl, mix mesclun with carrots and mint. Stir, then divide the salad into plates.
  • Garnish each portion with smoked ham slices and raspberries. Coat with vinaigrette.
