Summery salad with ham and raspberries
Ingredients
- 1 L (4 cups) of mesclun
- 250 ml (1 cup) of grated or sliced into juliennes carrots
- 30 ml (2 tablespoons) of fresh mint
- 16 slices of maple smoked ham
- 250 ml (1 cup) of raspberries
For the vinaigrette:
- 125 ml (1/2 cup) of raspberries
- 60 ml (1/4 cup) of olive oil
- 30 ml (2 tablespoons) of chopped chive
- 15 ml (1 tablespoon) of old-style mustard
- 15 ml (1 tablespoon) of lemon juice
- Salt and pepper up to taste
- In the container of an electric mixer, set ingredients for the vinaigrette. Mix for 1 minute.
- In a large salad bowl, mix mesclun with carrots and mint. Stir, then divide the salad into plates.
- Garnish each portion with smoked ham slices and raspberries. Coat with vinaigrette.
