Orzo and porto consommé
Ingredients
- 1 minced carrot
- 1/4 package of 250 g of Les Cultures de chez nous sliced leeks
- 1 L (4 cups) of beef consommé
- 125 ml (1/2 cup) of orzo
- 45 ml (3 tablespoons) of red Porto
- 15 ml (1 tablespoon) of butter
- 1 minced onion
- 1 branch of minced celery
- 1 stem of thyme (optional)
- 1 stem of rosemary (optional)
- 1 Bay leaf (optional)
- Melt butter in a casserole over medium heat. Roast carrots and onion. Add celery, leeks, and, if desired, thyme, rosemary, and Bay leaf. Salt and pepper.
- Pour in the beef consommé. Bring to a boil. Simmer for 20 minutes at medium heat, skimming occasionally.
- Filter the preparation above a casserole. Add orzo. Bring to a boil and cook 7 minutes.
- Add Porto.
