Ingredients
  • 454 g (1 pound) of fresh slamon, whitout its skin
  • 1/2 package of 250 g (2 cups) of Les Cultures de chez nous sliced leeks
  • 1 whisked egg yolk
  • Salt and pepper, up to taste
  • Some drops of green Tabasco sauce
  • 45 ml (3 tablespoons) of oil
  • 4 little breads of whole grain with sesame seeds
Preparation

  • Preheat oven to 325°F (165°C).
  • Chop salmon with a knife to make it tartare-like. In a bowl, mix salmon flesh with leek, egg yolk, salt, pepper, and Tabasco sauce. Make 4 round patties.
  • In a pan, heat oil at medium heat. Brown patties on each side for 5 to 6 minutes. Set aside in the oven to keep warm.
  • Broil bread, then garnish with 1 salmon patty.
Chef’s note

To vary toppings for more fun! Caper, roasted onions, wasabi mayonnaise, minced with cream iceberg lettuce, cucumber, sour cream, tomato and olive salsa, etc. For crispier patties, coat them with flour or breadcrumbs before cooking.
