Choco-strawberries mousses
Ingredients
- 250 g of dark chocolate 70%
- 6 egg yolks
- 60 ml (1/4 cup) of sugar
- 375 ml (1 1/2 cup) of 35% whipping cream
- 375 ml (1 1/2 cup) of diced strawberries
- 30 ml (2 tablespoons) of honey
- With a bain-marie, melt chocolate. Remove from heat and cool down.
- In a bowl, whisk egg yolks with sugar until the mix whitens.
- Gradually add melted chocolate to the mix of egg yolks.
- With an electric mixer, whip cream at high speed until firm spikes are obtained.
- Add whipped cream to the previous mix by carefully folding the preparation with a spatula.
- Add 250 ml (1 cup) of diced strawberries by carefully stirring.
- Divide the mousse into four dessert cups.
- Refrigerate for 2 to 3 hours.
- In a hermetical container, mix the remaining strawberries with honey. Set aside at fresh.
- When serving, garnish each mousse with strawberry salsa.
