Simple root vegetable velouté
Ingredients
- 2 onions
- 2 carrots
- 1/2 rutabaga
- 3 sweet potatoes
- 2 celery branches
- 1/2 package of 250 g (2 cups) of Les Cultures de chez nous sliced leeks
- 30 ml (2 tablespoons) of butter
- 15 ml (1 tablespoon) of chopped garlic
- 1.5 litres (6 cups) of chicken broth
- Salt and pepper up to taste
- Few parsley leaves (optional)
- Slice all vegetables into pieces.
- In a casserole, melt butter at low heat. Add onions and cook for 3 to 4 minutes, until translucent.
- Add remaining vegetables, garlic and broth. Season.
- Bring to a boil, cover and simmer at low heat for 40 to 45 minutes.
- Reduce with a hand blender until smooth.
- Garnish with a few parsley leaves, if desired.
