Rutabaga creamy soup with maple syrup
Ingredients
- 1 minced leek's white
- 1 diced rutabaga
- 1 liter (4 cups) of chicken broth
- 80 ml (1/3 cup) of maple syrup
- 125 ml (1/2 cup) of 15% cooking cream
- 30 ml (2 tablespoons) of olive oil
- 80 ml (1/3 cup) of minced dried shallots
- In a casserole, heat oil at medium heat. Roast leeks, shallots and rutabaga for 2 minutes.
- Pour in the broth and maple syrup. Bring to a boil. Cover and simmer for 20 to 25 minutes at medium heat until the rutabaga is cooked.
- Set the preparation in a mixer. Mix until obtaining a homogeneous preparation.
- Set back in a casserole and add cream. Heat for 1 to 2 minutes. Salt and pepper.
