Minced chicken with curry and quinoa
Ingredients
- 4 minced chicken breast without skin
- 1 package of 250 g (4 cups) of les Cultures e chez nous sliced leeks
- 10 ml (2 teaspoons) of curry
- 250 ml (1 cup) of quinoa
- 500 ml (2 cups) of chicken broth
- 30 ml (2 tablespoons) of olive oil
- In a casserole heat oil at medium heat. Cook chicken 1 to 2 minutes each side. Transfer chicken in a plate.
- In the same casserole, cook leeks for 2 to 3 minutes.
- Add curry, quinoa, broth, chicken and if desired, diced tomatoes. Salt, pepper and stir. Bring to a boil.
- Cover and cook at medium low heat for 18 to 20 minutes.
