Matane shrimp and leek velouté
Ingredients
- 60 ml (4 tablespoons) of butter
- 45 ml (3 tablespoons) of chopped onions
- 1/4 package of 250 g (1 cup) of Les Cultures de chez nous sliced leeks
- 60 ml (4 tablespoons) of flour
- 1 liter (4 cups) of homemade or commercial fish broth
- Salt and pepper up to taste
- 250 ml (1 cup) of Matane or nordic whole or chopped shrimps
- 125 ml (1/2 cup) of cooking cream
- In a pan, heat butter and simmer vegetables for 2 minutes. Add flour and mix well. Add fish broth and season. Bring to a boil while stirring continuously. Simmer 15 minutes at medium heat. Add shrimps and cream, then serve right away.
