Ingredients
  • 15 ml (1 tablespoon) of Dijon's mustard
  • 1 package of 250 g (4 cups) of Les Cultures de chez nous sliced leeks
  • 1 peeled and diced Cortland apple
  • 6 whisked eggs
  • 75 ml (1/3 cup) of chopped walnuts
  • 125 ml (1/2 cup) of 2% partly skimmed milk
  • 125 ml (1/2 cup) of grated Emmenthal cheese
  • 125 ml (1/2 cup) of grated Mozzarella cheese
  • A pinch of ground nutmeg
  • Pepper, up to taste
Preparation

  • Preheat oven to 350ºF (180ºC).
  • In a non-stick pan, brown walnuts. Set into a small bowl and set aside. Brown leeks at medium heat for a few minutes.
  • In a large bowl, whisk eggs, milk, cheeses and seasonings. Add apple cubes, nuts and leeks.
  • Pour mixture in a quich mould.
  • Oven bake for 40 to 50 minutes or until quiche-center puffs lightly and its top well browned.
Chef’s note

Quiches are nutritious and sustaining when we set aside crust and bacon. These ingredients are rich in saturated fats and salt without leading us to satiety. With this healthy version of the leeks and apples quiche, we used nuts and cheese to contrast with the apple flavour. An interesting mix which gives good fats, fibres, proteins, vitamins and minerals.
