Ingredients

For the sponge-cake:

  • 250 ml (1 cup) of flour
  • 5 ml (1 teaspoon) of baking powder
  • 3 eggs
  • 250 ml (1 cup) of sugar
  • 45 ml (3 tablespoons) of cold water

For the garnishing:

  • 180 ml (3/4 cup) of 35% whipping cream
  • 750 ml (3 cups) of fruits of your choice
  • 125 ml (1/2 cup) of apricots jelly or melted gooseberries
Preparation

  • Preheat oven to 400°F (200°C).

  • In a bowl, mix flour with baking powder.

  • With an electric mixer, whisk eggs until they whiten. Gradually add sugar, then water.

  • Carefully add dry ingredients to liquid ingredients.

  • Butter and flour a flan mould of 30 cm (12 inches) in diameter. Pour batter into the mould.

  • Oven bake for 12 minutes. Remove from oven and unmold. Cool down entirely before garnishing.

  • With an electric mixer, whip the cream.

  • Set fruits over cooled cake. Coat with melted jelly and garnish with whipped cream.
