  • 454 g (1 lb) of pizza dough
  • 15 ml (1 tablespoon) of Italian seasonings
  • 5 ml (1 teaspoon) of fennel seeds
  • Salt and pepper, up to taste
  • 30 ml (2 tablespoons) of olive oil
  • 250 ml (1 cup) of grated Mozzarella
  • 2 Italian tomatoes, minced
  • 1 red onion, finely sliced into rings
  • 15 ml (1 tablespoon) of thyme, chopped
  • 15 ml (1 tablespoon) of oregano, chopped
  • 1 garlic clove, chopped
  • 75 ml (1/3 cup) of grated Parmesan

  • Preheat oven to 400°F (200°C).
  • In a bowl, mix pizza dough with Italian seasonings and fennel seeds. Salt and pepper.
  • Shape the dough into a 20 cm (8 inches) square over a floured work surface. Lay the dough on oiled cooking sheets. Brush the surface with olive oil.
  • Garnish dough with Mozzarella, tomatoes, red onion, herbs, garlic and Parmesan.
  • Oven-bake for 15 to 20 minutes. Remove from oven and let cool down before slicing.
