Ingredients
  • 4 medium-sized tortillas
  • 1/2 package of 250 g (2 cups) of Les cultures de chez nous sliced leeks
  • 250 ml (1 cup) of diced ham
  • 3 eggs
  • 100 g (3 1/2 oz) of goat cheese
  • 30 ml (2 tablespoons) of olive oil
  • 1/2 chopped onion
  • 75 ml (1/3 cup) of milk
Preparation

  • Preheat oven at 375°F (190 °C).
  • Oil four muffins molds. Set tortillas in each molds.
  • In a pan, heat oil at medium heat. Brown sliced leeks with ham and onion for 2 to 3 minutes.
  • In a bowl, whisk eggs with goat cheese and milk. Salt and pepper. Add leeks and ham mixture. Stir. Fill up tortillas molds with this mixture.
  • Oven bake for 20 to 25 minutes, until eggs are cooked.

Make provisions of frozen fruits to always have some under the hand to make delicious smoothies to go with breakfast and brunchs.
