Stewed chicken with leeks and lemon
Ingredients
- 400 g (14 oz) of boneless chicken, without skin, cut into cubes
- Flour
- 60 ml (1/4 cup) of olive oil
- Salt and pepper up to taste
- 1 package (3 cups) of Les Cultures de chez nous sliced leeks
- 4 chopped garlic cloves
- 1 diced red pepper
- 1 diced green pepper
- 4 diced potatoes
- 250 ml (1 cup) of small cauliflower bouquets
- 30 ml (2 tablespoons) of herbs of Provence
- Lemon zest and juice
- 500 ml (2 cups) of chicken broth
- Cover chicken cubes with flour. Preheat a medium high heat a large cocotte with olive oil. Season chicken and brown each side for 1 to 2 minutes.
- Add remainings ingredients and reduce at low heat. Simmer for 50 to 60 minutes.
