Salmon duet, leeks sauce
Ingredients
- 1 salmon fillet of 700 g (about 1 1/2 pound)
- 1 package of 140 g of smoked salmon
- 45 ml (3 tablespoons) of fresh chopped dill
- 1/2 package of 250 g (2 cups) of Les Cultures de chez nous sliced leeks
- 125 ml (1/2 cup) of 15% cooking cream
- 30 ml (2 tablespoons) of butter
- 125 ml (1/2 cup) of milk
- Preheat oven at 205 ºC (400 ºF).
- Slice salmon fillet in two like a sandwich without cutting completely. Open and garnish with smoked salmon slices. Spread with dill. Close and slice into four equals portions.
- Over a baking sheet covered with parchment paper, lay fillets. Salt and pepper. Oven bake for 10 to 12 minutes.
- Meanwhile, heat butter at medium heat in a casserole. Cook leeks for 4 to 5 minutes. Pour cream and milk. Salt and pepper. Let simmer at medium heat for 3 to 4 minutes. Serve with fish.
