Pork, leeks and maple caramelized apples one pot
Ingredients
- 1 pork fillet of 680 g (about 1 1/3 pounds)
- 30 ml (2 tablespoons) of old-style mustard
- Salt and pepper up to taste
- 15 ml (1 tablespoon) of canola oil
- 3 peeled, pitted, and sliced into quarters Cortland apples
- 3 leeks sliced into rings of 5 cm (2 inches)
- 45 ml (3 tablespoons) of maple syrup
- 180 ml (3/4 cup) of chicken broth without added salt
- Preheat the oven to 350°F (180°C).
- Brush pork fillet with old-style mustard and salt and pepper seasoning.
- In an oven-safe pan, heat up the oil at high heat. Brown each side of the fillet, until golden. Set aside on a plate.
- In the same pan, brown apples and leeks for 2 minutes at medium-heat while stirring once in a while.
- Pour maple syrup and chicken broth. Let simmer for 5 minutes.
- Set the pork filler in the pan and roll to cover well with the preparation.
- Continue baking in the oven for 15 to 20 minutes, depending on its thickness, until a baking thermometer set in the middle of the fillet indicates 155°F (68°C). Stir the leek mixture at mid-cooking.
- Remove pan from oven. Slice meat and serve with apples and leeks.
