Orange-flavoured pork sauté with sweet peas

Ingredients

For the sauce:

  • 180 ml (3/4 cup) of orange juice
  • 60 ml (1/4 cup) of sweet chilli pepper sauce (such as A Taste of Thai or Thai Kitchen)
  • 45 ml (3 tablespoons) of soy sauce
  • 15 ml (1 tablespoon) of honey
  • 10 ml (2 teaspoons) of garlic
  • 10 ml (2 teaspoons) of cornstarch

For the sauté:

  • 2 oranges
  • 8 pork loin chops
  • 30 ml (2 tablespoons) of sesame oil (non-roasted)
  • 3 sliced green onions
  • 250 ml (1 cup) of sweet peas

  • In a bowl, mix together all ingredients for the sauce.
  • Remove orange supremes by first peeling the raw peel and then slicing each side of the membranes. Press the membranes above a bowl containing the sauce to recuperate the juice from the oranges.
  • Trim pork chops by removing its bone and exceeding fat. Slice chops into slices.
  • In a pan or a wok, heat oil at medium-high heat. Roast a few slices at a time for 4 to 5 minutes. Remove from the pan and set into a plate.
  • In the same pan, cook green onions and sweet peas for 2 minutes.
  • Pour the sauce. Set back pork chops in the pan and bring them to a boil.
  • Add orange supremes and heat for 1 minute.
