Leeks with Oka cheese croutons
Ingredients

30 ml (2 tablespoons) of butter

1 package of 250 g (4 cups) of Les Cultures de chez nous sliced leeks

150 ml (2/3 cup) of cooking cream

Salt up to taste

12 thin slices of buttered baguette bread

12 thin slices of Oka cheese, slightly thinner than baguette slices

Crushed pepper up to taste

Preheat oven to 375°F (190°C).

Heat butter in a large non-adhesive pan at medium heat. Add Les Cultures de chez nous sliced leeks and cook for 6 to 7 minutes while stirring.

Reduce heat to medium-low and cook until leek has returned its water. Stir from time to time. Do not brown. Add cream and reduce until it thickens. Salt.

Meanwhile, broil bread slices on a baking sheet in the oven. Then, divide the leeks over the grilled bread. Add a cheese slice. Spread lightly with crushed pepper.

Oven bake for 15 minutes or until cheese is lightly gratin.
