Leeks soup with apples
Ingredients
- 1 big potato
- 1 medium onion
- 2 Cortland apples
- 20 ml (4 teaspoons) of olive oil
- 1 package of 250 g (4 cups) of Les Cultures de chez nous sliced leeks
- 1,25 L (5 cups) of chicken broth without added salt
- 1 Bay leaf
- 1 thyme stem
- Salt and peper up to taste
- Peel and dice potato and apples. Chop onion.
- In a casserole, heat oil at medium heat. Cook onion, potato, apples and sliced leeks 5 minutes, without browning.
- Add broth, Bay leaf and thyme stem. Bring to a boil. Cover and let simmer 35 minutes, until vegetabes tenders.
- Remove Bay leaf and thyme stem. With a mixer, reduce the preparation into a smooth cream.
