Leek soup with pears
Ingredients
- 4 big potatoes
- 3 pears
- 45 ml (3 tablespoons) of butter
- 2 packages of 250 g (8 cups) of Les Cultures de chez nous sliced leeks
- 2 litres (8 cups) of chicken or vegetables broth
- Salt and pepper up to taste
- Peel potatoes and pears, then slice into cubes. Set in a container filled with cold water and set aside.
- In a casserole, melt butter at medium heat. Brown leeks for 4 to 5 minutes, without browning completely.
- Drain potatoes and pears.
- Add potatoes, pears, chicken or vegetables broth and seasonings. Bring to a boil. Simmer uncovered for 20 to 25 minutes at medium heat.
- Set in the mixer . Mix till homogenization.
