Leek soup au gratin
Ingredients
- 1 package of 250 g (4 cups) of Les Cultures de chez nous sliced leeks
- 60 ml (1/4 cup) of butter
- Salt and pepper, to taste
- 20 ml (4 teaspoons) of flour
- 500 ml (2 cups) of chicken or vegetables broth
- 250 ml (1 cup) of milk
- 4 country-style roasted bread slices
- 250 ml (1 cup) of grated Emmenthal, Gruyère or any other cheese
- In a casserole, fry sliced leeks in butter for 10 minutes at medium heat while stirring. Salt and pepper.
- Add flour and roast while continuously stirring.
- Add broth. Bring to a boil while stirring. Reduce heat, season, cover and simmer for 7 to 8 minutes.
- Add milk and heat without boiling.
- Pour soup into an oven-safe bowl, set a bread slice, and sprinkle cheese and gratin in the oven. Serve.
