Fish with squash and leeks
Ingredients
- 375 ml (1 1/2 cup) of grated Butternut squash
- 1/4 package of 250 g (1 cup) of Les Cultures de chez nous sliced leeks
- 125 ml (1/2 cup) of 15% cooking cream
- 80 ml (1/3 cup) of grated Parmesan
- 4 cod fillets of 180 g (about 1/3 pound)
- 30 ml (2 tablespoons) of olive oil
- 30 ml (2 tablespoons) of minced fresh basil
- Preheat oven at 400°F (205°C).
- In a pan, heat oil at medium heat. Cook squash and leeks for 4 to 5 minutes. Add cream, parmesan and, if desired, basil. Salt and pepper.
- Set cod fillets over a baking sheet covered with parchment paper. Divide squash and leeks mixture over fish. Oven bake 12 to 15 minutes then serve.
