Assortment of poached fishes
Ingredients
- 250 ml (1 cup) of lobster bisque
- 125 ml (1/2 cup) of dry white wine
- 1 minced leek
- 225 g (1/2 pound) of salmon filet
- 400 g (about 1 pound) of tilapia filets
- 2 diced tomatoes
- 1 to 2 pinch of Cayenne pepper
- 6 to 8 saffron pistils (optional)
- 15 ml (1 tablespoon) of fresh chopped chive (optional)
- In a casserole, bring lobster bisque with white wine, leek, and saffron to a boil.
- Add fish, tomatoes, and Cayenne pepper. Salt. Simmer at low heat for 8 to 10 minutes until the fish is cooked. If desired, spread chive when serving.
