Prepare fruits and leeks in a large bowl. Add brown sugar and mango juice to it. Macerate for 30 to 45 minutes.
Preheat oven at 350°F (180°C).
Spread phyllo pastry side by side. Brush with melted butter. Set two more phyllo sheet and brush again. Repeat the same thing with all remaining phyllo pastry.
Drain fruits and set at the center of the pastry over its lenght. Fold phyllo sides over fruits as tight as possible. Fold edges to close entirely the phyllo pastry over the fruits. Set over a cookie sheet. Brush strudel with butter. Garnish with fruits slices.
Oven bake 30 minutes or until strudel is well grilled. Cool down. May sprinkle powdered sugar. May also be served with creme anglaise or fruits coulis.
